Easy and Healthy Fruit Popsicle Recipe



Who would eat popsicles when its 10 degrees outside??? Me...and Caleb. But really, these popsicles are perfect for spring and summer and with spring around the corner, now is the time to start planning your healthy lifestyle and adding these delicious treats to your must-try list!



It's freezing today! But that doesn't stop me from thinking 2 months ahead to warmer weather and a time when the sun doesn't stop shining. Getting in shape also doesn't happen over night, so getting your mind on the right track now with healthy eating will help you get in shape by the time it's bikini season! After all, as a rule of thumb, your diet has a 60% -75% affect on how you look and feel, the rest is exercise.

Caleb and I are strict vegetarians, meaning, no meat, no fish, no dairy products and no eggs. We're consciously vegan focused, so we don't eat honey either! Or figs...who would have thought figs aren't vegan? It's been a great challenge but an exciting one too! We've never felt better and we don't think of it as a diet, it's a lifestyle and a lifelong commitment. With that being said, I am all about looking for new foods to make that are healthy, little to no added sugar, and vegan! Which brings me to my super easy and healthy fruit/berry popsicles.

I made 2 different flavors. Blueberries and blackberries with pomegranate, and mango with orange. But seriously any berry or fruit would do. I'm looking to make some with strawberries and another with pineapples and maybe even one with blueberries and mint! Yum!

Here's what you need:

- Popsicle molds
- Straws (or the handles that usually come with popsicle molds)


- Coconut water (no added sugar)
- Pomegranate juice (no added sugar, it's already high in natural sugar)
- Freshly squeezed orange juice
- Diced mangos
- Blueberries
- Blackberries
- Pinch of Stevia (or leave it out)


How much of the fruit you add is up to you! I like more fruit in mine so I filled 3/4th's of each mold with fruit and berries.


If you're doing the berries, pour 1/2 cup coconut water and 2-3 tablespoons of pomegranate juice into a cup and mix. Add in Stevia if you like.

Once mixed pour into the popsicle molds, cover with plastic wrap and punch a hole through with the straw into each mold. (Or just use the handles that come with your popsicle molds.)

If you're making the mango orange popsicle, mix 1/4th cup coconut water and 1/4th cup freshly squeezed orange juice in a cup and add a pinch of Stevia. Mix and pour into the molds.

Place the popsicles in your freezer for a few hours. I like to freeze them over night just to ensure they are frozen.



Take out and enjoy on a hot day or...when it's 10 degrees out like me and Caleb! Ha!
